The tartness of rhubarb compliments the dense sweetness of fully ripened strawberries, and makes it more complex than either straight strawberry or straigh rhubarb jam, but something nicely in the middle. (Can't decide whether to have rhubarb or strawberry? Have both!) The sweet-tart characteristics are somewhat muted as a jam, but this makes it delicious whenever you feel like a sweet/savory combination. Try a honey ham with strawberry-rhubarb jam on multigrain bread.
