Strawberry Rhubarb
The tartness of rhubarb compliments the dense sweetness of fully ripened strawberries, and makes it more complex than either straight strawberry or straight rhubarb jam, but something nicely in the middle. (Can't decide whether to have rhubarb or strawberry? Have both!) The sweet-tart characteristics are somewhat muted as a jam, but this makes it delicious whenever you feel like a sweet/savory, but well-balanced combination. Try a honey ham with strawberry-rhubarb jam on lightly toasted multigrain bread as an open sandwich or snack.
Elaine's favorite: Butter lettuce tossed with a champagne vinaigrette -- toss spoonfuls of strawberry rhubarb jam on top and add honeyed walnuts, goat cheese, cubed roasted beets and roasted pepita seeds for a beautiful salad.
